Vegan Tuesday

Every Tuesday I will Feature an easy-to-prepare vegan dish.  Today's dish is  Kidney Bean Salad with Rice.

Easy to prepare:

1 can of kidney beans
1  onion
1 cucumber
2 tablespoons of olive oil
1 teaspoon of vinegar
cilantro and salt to taste
2 cups of cooked rice

I always cook rice and kidney beans.

Mix kidney beans, cucumber, onions, vinegar, olive oil, cilantro and salt.  Let cool and add the rice.

Froggy said... If I'm honest, it doesn't look like a dish I would willing make myself to eat. However, I'm always open to trying new things. I like all the ingredients you used and would try it if it was at a picnic.

Lisa, this sounds delicious! 2 of my kids' favorite foods are rice & beans so this is perfect. A meat free dish with great protein too!

You're welcome for the tip. So glad you will try it. I contact a lot of my favorite brands and ask them for coupons all the time. Most are more than happy to send them.

For this recipe, I guess I could use the Goya bean coupon they sent me :)

Hi Lisa,
Thanks for the follow I am now following you back. I had to do a double take when I seen this photo. Being hispanic we eat rice and beans alot. This past summer we grew alot of cucumbers in our garden, my husband makes a great cucumber salad. I'll tell you when we had rice and beans and the salad with it was really good. Great post! Digna
