Vegan Tuesday-10/26


Want to make this scrumptious dish?  here's how

What you need:

Spinach; frozen or fresh
Garlic; 2 cloves
Olive oil; preferably extra virgin
Beans
Onion
Rice

Here's what ya do:

Cook Frozen spinach just before it begins to thaw.
Take 2 tablespoons of of olive oil and 2 cloves of garlic and saute until golden brown.
Add the the spinach to the olive oil and garlic and let simmer.  Do not overcook!
Saute 3 tablespoons of olive oil and half an onion
Add beans to sauteed oil and onions and let thicken
Now you are ready to combine the beans with the spinach
Serve with rice
I also added fried garlic as a topping.
